Peek A Boo Pumpkin Bread

Ingredients:
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice
1/3 cup vegetable oil
2 large eggs
1/3 cup light brown sugar, packed
1/3 cup honey
1 tsp vanilla extract
3 oz low fat cream cheese, softened
1 cup pumpkin puree
1/2 cup dried cranberries
1/3 cup old fashioned oats
1 tsp grated orange zest

Instructions:
Preheat oven to 350 degrees F. Spray an 8"x 4"x 2" loaf pan with non stick cooking spray, line with parchment or waxed paper and set aside. In a large bowl, combine flours, baking powder, baking soda, pumpkin pie spice and mix well. In a medium bowl combine the oil, eggs, sugar, honey and vanilla, mix well. Stir liquid ingredients into the dry ingredients just until batter comes together. Don’t over mix. In a small bowl add 2 tablespoons of the batter to the cream cheese, mix well and set aside. Add the pumpkin, cranberries, oats and zest to the large bowl of batter and mix gently until combined. Spread 1 cup of batter into bottom of prepared pan and, using a teaspoon, dot with half the cream cheese mixture. Spoon an additional cup of batter over, dot with remaining cream cheese mixture and top with the last cup of batter. Place bread in preheated oven and bake for 60-70 minutes or until a tooth pick inserted in center of loaf comes out with a few moist crumbs clinging to it. Remove bread from oven and cool in pan for 10 minutes. Carefully remove loaf from pan and cool completely on a cooling rack before serving.
