I am not a huge fan of popcorn but now if you add a little caramel to it I am all in.
This recipe is easy and delicious. You can stir in peanuts, marshmallows, chocolate chips or any other favorite ingredients you like.
Ingredients:
3 bags microwave popcorn, popped
1/2 cup (1 stick) butter (I like to use salted butter since the rest of the popcorn is so sweet)
1 cup light brown sugar
1 cup light corn syrup
1 can sweetened condensed milk
Directions:
Pop popcorn according to package directions and remove any unpopped kernels. Pour popcorn into a LARGE bowl.
In a saucepan bring the butter, brown sugar, and corn syrup to a boil. Reduce to medium heat and add sweetened condensed milk. Stir constantly for 4 minutes scraping the sides and the bottom of the pan to prevent it from burning. The longer you cook it the firmer the caramel will be. Pour 1/2 of the caramel over popcorn and stir. Then pour the remaining caramel on the popcorn and stir until well coated. You can eat this warm or save it for later.
